July - Plaice with Apple and Ginger
455g (1lb) frozen plaice fillets, defrosted and skinned
salt and black pepper
150ml (5 fl oz) dry cider
1.25cm (half an inch) piece fresh ginger, peeled and finely chopped
1 red apple, cored and chopped
fresh chopped parsley, to garnish
Place the fish fillets in a large shallow pan. Season with salt and pepper.
Add the remaining ingredients. Cover and poach for 5-7 minutes until cooked.
Garnish the potatoes with parsley and serve with a selection of vegetables.
